Friday and Saturday Dinner service starts at 5, but feel free to join us for a drink starting at 3pm. James Beard Award-winning Chef Andrew Black makes his way back to Skirvin Hotel to open his newest restaurant concept, Perle Mesta. The restaurant will be his first concept to open since winning a James Beard award as 2023’s Best Chef Southwest and will be located on the first floor of the historic Skirvin Hotel (One Park Avenue, Oklahoma City). Perle Mesta will offer breakfast, lunch, and dinner service and the cuisine will reflect Chef Black’s continued exploration of what he calls “possibility cuisine,” a concept he attributes to his style of cooking that explores and embraces the endless possibilities of ingredients, flavors, techniques, and cultural influences. In this context, possibility cuisine involves chefs pushing the boundaries of traditional cooking and experimenting with unconventional ingredients, fusion cuisine, molecular gastronomy, or avant-garde techniques. It may involve a sense of creativity, innovation, and openness to exploring new culinary horizons.

From the moment we walked in we were greeted warmly by the friendly and attentive staff, who made us feel like valued guests throughout the entire dining experience. The food was nothing short of perfection. The steak, their star dish, was cooked exactly to our liking - juicy, flavorful and tender, with every bite practically melting in our mouths.     SUPERB! Excellent presentations. The Taster F5 Kobe beef, bay scallops, the Radicchio Ceaser Salad and an Entree of Citrus Fennel dusted scallops were savory, aromatic, delightfully sensual. Absolute attention to detail. Looking forward to exploring Perle Mesta again soon!

    Sparrow never disappoints. My wife has celiacs and must eat strictly gluten free. We feel safe at this restaurant and the food is always outstanding. A gem in Edmond OK.
