Waiter provided a brief description of dishes when asked. Checked in often. Attentive and patient. Servers described in greater detail the dishes they bring to the table. Food: Miso soup had two thin tofu slices garnished with diced chives. Moderately hot. Sea bass with black bean sauce was homey. Topped with ginger slices and chives. Black bean sauce was great over rice. Black cod with miso was delicate and velvety. Miso glaze was mildly sweet and savory. Black cod melted with every bite. Shrimp with spicy garlic sauce was well-seasoned. Shrimp had a perfect bouncy texture. Cucumber salad with crab had a zesty vinaigrette. Pickled radish wrapped around the crab was a refreshing bite. Cleansed the palate. Vanilla Miso Tart was creamy and delightful. Bento Box: Dark chocolate lava cake had an accompaniment of a variety of berries. A perfect balance of bitter and sweet. Our view was the incredible fountains of Caesars Palace. Such a fun, exciting dining experience. John was our server and he went above and beyond! I have a very dangerous allergy to milk protein and he asked us right away if we had any food allergies he should know about. He let me know that there was dairy in 2 of the items we were ordering. (they were for my teen) I thought that was so special. Food allergies are so embarrassing, I really appreciated the care John took! His server assistant was professional, and friendly. The restaurant was packed and you would never have known that by the way our table was taken care of. Well done. We're Vegas locals, so we're fortunate to have a lot of great dining choices. This was one of the best meals we've ever had. Highly recommend Hell's Kitchen. You made our Christmas Eve very special and memorable. We overheard the lady at the front desk say that the wait would be an hour at the time (7pm). There are three sections- front, with a couple tables and the bar, then the wide middle, with a view of the kitchen, and then the back, with a view of the fresh fish. Portions are pretty small but every dish was wonderful. Focaccia is off the menu- we saw other tables order it and we wanted to try it. Focaccia is super hot and fresh and served with whipped ricotta, definitely one of my favorite of the night. Their pesto and ricotta gnocchi- it comes in a ceramic dish so piping hot- and was extremely fresh and good. Their caramel tiramisu was a bit too sweet due to the caramel, but otherwise OK. Fish stew is served in a shallow bowl so it gets cold very quick. Would we go back? YES. LONGER REVIEW: We are Vegas locals who got together for a family dinner and picked Wakuda. SERVICE: Seated promptly at reservation time, but at a less than desirable table. Right at the junction of where people enter in the main dining room. Vincent - our main server - was Outstanding. He was there when you needed him with great advice to boot. Food service was well paced. FOOD and DRINKS: Lychee Martini, Red wine by the Glass (nice selection), and a Yokohama Old Fashioned. Very tasty. Wine and Sake list is extensive. All to Table Share: Unagi Roll, Wagyu Roll, A5 Wagyu appetizer, Gyoza, Salmon, Shrimp Skewers and Wakuda Wings. Very, very yummy; everything was cooked and prepared to perfection. We did share two desserts, don't miss the Shaved ice with ice cream. OVERALL: YES, we would go back. The only downside was the table - even though we requested a booth and made the reservation 30+ days ahead of time, we had probably the worst table in the restaurant, and the manager could not reseat us.
