Our recent dining experience at Indigo, located within the stunning Wymara Resort in Grace Bay, was nothing short of exceptional. We began our meal with the Yellowfin Tuna Tataki appetizer, featuring Togarashi rice crisps, avocado mousse, and red pickled onion. This dish was a perfect harmony of flavors and textures—crispy, creamy, and just the right balance of tangy and savory. It was a standout start to the evening. For our entrées, we indulged in the Caribbean Red Coconut Curry and the Mahi Mahi Dinner Special. Both dishes showcased the chef’s skillful use of local flavors and fresh ingredients. The Caribbean Red Coconut Curry was rich and flavorful, with layers of spice that were beautifully balanced. The Mahi Mahi, cooked to perfection, was a testament to the restaurant’s commitment to high-quality, seasonal seafood. A highlight of the evening was a personal visit from Chef Andrew, who thoughtfully stopped by our table to recommend dishes and assist with wine pairings. We dined at Provence on our previous visit and loved it then.Love it even more now .The Chef Eric is an artist in more ways than culinary. His dishes are a symphony of flavors , but the presentation is a true art for the eyes. The mushroom risotto was delicious and the pieces of asparagus in it were just perfect. Not raw, but still crispy. Strongly recommend the Creme brûlée duck foie gras .It was a genius creation of savory and sweet . Perfection.

It was a pleasure to savor each course of the seven-course menu, making it difficult to choose a favorite. The chef Dannis, and hostess Yenty played key roles in enhancing our overall experience with their attentive and engaging service.
