Jack Timmons grew up in Texas and has lived in Seattle for over three decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience.After more than a year of practicing the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at ‘BBQ Raves’, Jack opened his first restaurant in the South of Downtown (SoDo) area of Seattle – Jack’s BBQ in 2014.At our newest location on the border of Bellevue and Redmond, we serve authentic Central Texas Barbecue with Brisket, Ribs, Sausage and Chicken.     Rock Creek is delightful! The blackened Wahoo was incredible, as were the tuna tartare, sea bass wraps, and old bay potatoes. The mussels were not as good as the last time I had them ... different sauce that was quite thin and not as robust. The restaurant is lovely, the service was fantastic, and we thoroughly enjoyed our experience.

    This location has turned around from my experience a couple years back. I would’ve recommended staying at the Tacoma location due to size and ambience and theme of that location, but this one here in Bellevue has surprised me. Maybe due to new management? Quality of service has gone up since then and our server was very polite and nice and lovely. The guest check in hostesses created and set our table up for a Sunday evening “Valentines” dinner since we chose to avoid the rush and this already had won me and my girlfriend over. A great surprise and the food was fresh and the fondue was great. Offering vegan option for my girlfriend and for me to enjoy my meats and seafood I enjoy. I would recommend booking a dinner or lunch here as like I said quality has been met to where I feel I can recommend this location as a viable option versus traveling down to Tacoma for their bigger venue. Love this spot now and reminds me of a small little get away in France or Italy.

    I have not been since they remodeled. It looks nice inside. Our server was great. I was a little taken back by all the families with kids and how horrible and loud the children were. It takes away from the meal and conversation when all you hear is tantrums and bratty kids. Since the place is an open concept it gets really loud with that. But that doesn't have anything to do with the way the restaurant is run, its just something to consider if you want to go and have a business meeting or conversation with friends.

    We love Jack’s. It’s true Texas barbque that always delivers. We tried the steaks and Cesar and they were delicious. We’ve also taken their smoking classes and they are well worth the time!
