The ingredients are hyper local with all of the vegetables coming from the nearby garden. He walked us gracefully through classic Omakase and then transitioned to incredible creative local variations featuring ingredients like chiles. The quail yakatori in mole colorado was sublime. The pairings were all excellent and featured obscure and exotic small production from Valle de Guadalupe. My husband had a steak and mushroom and he said it was delicious, I had pasta in mushrooms and shrimp added.. the sauces were to die for. we finalized with a tres leches cake and some Carajillos. I had the mazapán and my husband had the Chocomenta carajillo both of them were amazing! I definitely would recommend this place.
