- JJOSECaribbean •3 reviews5.0Dined 1 day agoEverything was amazing from the greetings as soon as you walk in, the service so attentive and the food to top it all off. Honestly my favorite restaurant, the locally queen conch & mahi mahi ceviche and the house smoked fish rillete are perfect appetizers, the beef terderloin is my favorite main course ever and the coconut crème brûlée is perfection as always to end it all. From the moment we arrived, the atmosphere set the tone for an elegant yet inviting evening. The restaurant exudes understated sophistication, complemented by the resort’s beautiful surroundings and warm hospitality. We began our meal with the Yellowfin Tuna Tataki appetizer, featuring Togarashi rice crisps, avocado mousse, and red pickled onion. This dish was a perfect harmony of flavors and textures—crispy, creamy, and just the right balance of tangy and savory. It was a standout start to the evening. For our entrées, we indulged in the Caribbean Red Coconut Curry and the Mahi Mahi Dinner Special. Both dishes showcased the chef’s skillful use of local flavors and fresh ingredients. The Caribbean Red Coconut Curry was rich and flavorful, with layers of spice that were beautifully balanced. The Mahi Mahi, cooked to perfection, was a testament to the restaurant’s commitment to high-quality, seasonal seafood. A highlight of the evening was a personal visit from Chef Andrew, who thoughtfully stopped by our table to recommend dishes and assist with wine pairings. His insight and expertise elevated the entire experience, making it not just a meal but a memorable event. Indigo is more than just a restaurant; it’s a celebration of culinary artistry. Whether you’re staying at the Wymara Resort or simply seeking an unforgettable dining experience in Turks and Caicos, Indigo is a must-visit. From the impeccable service to the thoughtfully curated menu, everything about this evening left us eager to return. Highly recommended.More infoIndigoPrice: Expensive• Grill• Turks and Caicos•4.8
