We have been to Italy and studied it's masters. We have tasted (a lot) of wine. We have searched for the best ingredients, and learned and perfected the best recipes. Why wouldn't we be the best Italian experience in the Vail Valley! The idea of growing fresh fruits and vegetables in the Rocky Mountains might seem crazy to some, but for us it is just another step in perfecting our craft. Our Chefs and Gardeners labor tirelessly to bring you the best produce and ingredients available seasonallyWe try each day to live and work with a purpose. Each step of your evening has been pondered. We try hard to bring you the food you crave and anticipate your every need while you are dining with us. From the stuzzichino when you step in our door to the parting sips of limoncello.

Located in the heart of the old railroad and mining town of Minturn, the Saloon’s building dates back to 1901. During the last one hundred years it has been, at one time or another, home to various taverns, restaurants and even back room gambling for railroaders. While the last five decades have seen the development of Vail and Beaver Creek resorts just seven miles on either side of Minturn, the town’s appearance and feel retains its historic Colorado roots. Recently under new ownership, The Saloon has undergone a complete renovation and reopened in November of '23 with a fresh new menu and updated space. Chef Anthony Mazza's menu features slow-cooked short rib and pork cheek and Colorado River Ranch wagyu steak. The nostalgia and historical memorabilia and photos remain. The space still feels like The Saloon, but carried into the present day. Enjoy a resurrected Colorado Saloon and feel the history all around you.

What a great day. We drove up to Ashcroft with another couple to see the gorgeous leaves turning to fall colors, and took a nice long walk up to the Pine Creek Cookhouse before lunch. We were greeted by a delightful host who asked if we still wanted to eat outside, as we had requested that in our reservation. We walked out and were seated there, but quickly discovered it to be too cold and windy. When we told her we had changed our mind, she gladly accommodated at an inside table. Our server, Maya was absolutely charming. She immediately took our drink order, then gave us just the right amount of time to explore the fabulous menu before asking for our order. Several suggestions she made were right on point. We had been to the Cookhouse many times before, but somehow hadn't made it up there this summer. The views were exceptional, as always and the food was divine. I would call this "Upscale Local" cuisine with fun menu items like the Rocky Mountain Elk Brats, Grilled Salmon BLT, Ruby Red Trout, delicious Tomato Parmesan Soup and fabulous salads, with multiple protein options including salmon, shrimp or steak. We all commented upon leaving that we need to come back here more often!!
