Located in the heart of the old railroad and mining town of Minturn, the Saloon’s building dates back to 1901. During the last one hundred years it has been, at one time or another, home to various taverns, restaurants and even back room gambling for railroaders. While the last five decades have seen the development of Vail and Beaver Creek resorts just seven miles on either side of Minturn, the town’s appearance and feel retains its historic Colorado roots. Recently under new ownership, The Saloon has undergone a complete renovation and reopened in November of '23 with a fresh new menu and updated space. Chef Anthony Mazza's menu features slow-cooked short rib and pork cheek and Colorado River Ranch wagyu steak. The nostalgia and historical memorabilia and photos remain.     This was our first time visiting the monarch and we were excited to try the chophouse. While we had to wait nearly 20 mins after our reservation time to be seated, the bar is lovely and we enjoyed two espresso martinis. Once seated, our server Troy was excellent. He clearly knew the menu and spirits well but was timely, kind, and efficient. He came around at perfect intervals and paced our meal appropriately. We started with the oysters which were large and flavorful. I had the sea bass which was perfectly cooked and served in a saffron broth which was delicious. My husband had the NY strip which was thicker than expected, served with the most delightful whipped potato and cooked to perfection. The side of asparagus was good as well. Overall a lovely meal and not overpriced.

    Excellent dinner tonight with our kids! Very family-friendly place. Fantastic food options for kids, great service, very good food, and wonderful ambiance. Meal also moved along at a good pace which is helpful with little ones. And they have coloring/crayons for kids. We will definitely return when we're back at Vail next year!!
