Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

    We had an absolutely wonderful experience from the second we walked in the door. Our server Megan was fantastic, knowledgeable and very friendly. There are not enough words to explain how amazing the food is, best meal from appetizers to dessert I’ve ever had. We were able to speak with the Chef and Manager who both were extremely personable as well. Can’t recommend a night to Sazon enough.

    We were here for a very generous thanksgiving meal and received incredible value for our money. I recommend the soaking pools prior to dinner and then you will have a relaxing delicious dining experience. The food was abundant, well seasoned and tender with choices for all types of diners on a holiday menu.

    Santa Cafe provided us a warm and memorable Thanksgiving experience!! Our original plans were unexpectedly re-routed due to over two foot of snow in Telluride. Santa cafe was an unexpected and amazing surprise with the most savory and delicious food anyone could ever imagine and their staff giving up their Thanksgiving day to make ours special. Many thanks to all of you…and your hospitality, much appreciated! My husband enjoyed the calamari and I enjoyed the pillowy, pumpkin ravioli. This followed by the filet on celery root puree with scalloped stacked potato and herb side dish. I enjoyed the amazing bone in chop with some sort of pearl pasta in the most amazing wine reduction sauce! Waiter, somalier, stopped by and then the manager with a gift, it was a jar of hot rum mixture to take home and a sample at the table. It was delicious! Thank you for such a memorable experience!

    We are Spanish and can verify that the food is authentic Spanish. The morcilla pinxtos were excellent, the lamb albondigas were bigger and tastier than we expected, and the baguette and olive oil were excellent. The espresso was also excellent.

    The eggs Benedict and steak and eggs were excellent. Good salad dressing. Rather expensive and light on the hollandaise sauce, but of high quality. We were placed in a quiet seating area distant from a noisy crowd.
