Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

Set up a request for 4 top on a Sunday night. Showed up and the hostess seated us right away. Soscha was our server and got us acclimated to the small plate way of ordering and also explained any specials while answering our questions about food terms and meanings. We decided to get right into the menu with Estrella Lager, wine from the Duoro and a Jumilla which were all excellent. We started the night with Marcona Almonds/pickle/olives. The Pimenton is a spicy dusting on the almonds…so good with beers. We chose to do round 1 with Fried Manchego w/apricot honey, Artichokes w/goat cheese, and fried pork belly. All were excellent! The baguette w/butter and olive oil served as a springboard into round 2. For round 2, we had grilled shrimp w/ fennel salad, New Mexico flat iron steak w/ caramel sauce…perfect choices for proteins. The big, juicy, flavorful fried chunks of pork were cooked perfectly and served with a semi spicy sauce. Flat Iron NM steak was grilled to a perfect Medium Rare temp—-so good! Finishing off with some fresh raspberry sorbet, vanilla tart with brandied cherries, and a round of hot teas. The sorbet was tart, with perfect consistency. The vanilla tart was a flavorful way to end the meal and the brandied cherries added a bit of acidity to the crunchy and creaminess of the tart. The waitstaff was humming as the night was busy early with diners, then the bar patrons picked up the slack after 830pm. The cute decor and excellent flavors made for a great SFE dinner out. Soscha exhibited the perfect skills of wine education, suggesting the next selection, all wrapped with a great smile and sense of humor. La Boca is definitely a “must do” for SFE diners and wine peeps. Can’t wait—-we will definitely be back for Paella soon!

My girlfriends and I ate dinner at Sazon while visiting Santa Fe and were absolutely blown away. The food was delicious and delightfully surprising, and the service was impeccable — we were even greeted by the chef! Our server was very knowledgeable about the dishes and gave wonderful recommendations. If you have the opportunity to dine at Sazon, you MUST try the Sopa De Amor — it has the most interesting and delicious combination of flavors unlike anything I’ve ever tasted before.

Date night out with my spouse and her choice was La Pazuela in the Hotel La Fonda. Ambiance was excellent…beautiful romantic dining room as well as a separate tavern with live music—-flamenco guitar trio, I believe. Our hostess seated us promptly for our reservation for two and bottled water and a mocktail was ordered. Our server, Bryan, was on point with menu recommendations and explanations. We ordered the Chiles Rellenos (one cheese and one shredded beef) and a chicken enchilada duo with “Christmas Chile Sauce.” Nothing was too spicy, the accompanying posole and pintos were excellent as well as the entrees. After dinner coffee and a shared pineapple upside down cake was a perfect finisher. Afterwards, we sat for a bit in front of a huge, cozy fireplace—how idyllic. The service staff didn’t miss a beat, the hostess validated our parking, and we were on our way to stroll the town square and enjoy the holiday lights. Strongly recommend staying in the hotel if you’re visiting Santa Fe and enjoying the fireplace seating areas as well as a reasonably priced dinner at La Pazuela.
