Jack Timmons grew up in Texas and has lived in Seattle for over three decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience.After more than a year of practicing the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at ‘BBQ Raves’, Jack opened his first restaurant in the South of Downtown (SoDo) area of Seattle – Jack’s BBQ in 2014.At our newest location on the border of Bellevue and Redmond, we serve authentic Central Texas Barbecue with Brisket, Ribs, Sausage and Chicken. Exquisite dining experience. Our server was knowledgable about the menu, quick with our drinks, and very warm-hearted. You can feel when a restaurant cares about its guests, and Carmine’s cares. Also, the NYE special cake was SO cool!!!

Had a reservation for 2 for a birthday and they didn't disappoint. The food was amazing, no complaints here. I had the spiny lobster and the Chilean halibut and everything was so delicious and fresh and hot. Our sever was amazing as well very friendly, and knew exactly when to come back and helps us almost like she was reading our minds. Overall amazing experience will definitely be coming back very soon to try new things.

Very good service even though the place was packed, and excellent food. Ceviche was terrific, as was the cooked octopus (which is often done poorly at other restaurants). Love the crispy potatoes. The beef in the stir fry was very tender and mixed seafood with fried rice was very good too.

We love Jack’s. It’s true Texas barbque that always delivers. We tried the steaks and Cesar and they were delicious. We’ve also taken their smoking classes and they are well worth the time!
