Sal was an original, one of a kind. He brought us the art of Italian food that dates back to the “old country”, and we’re honored to carry on his tradition. Sal grew up in a small town in Sicily, where he spent years helping his mother in the kitchen. In the 1960’s he began his American journey, working under a chef on Long Island, where, according to Sal, he learned a few tricks. Sal would soon carry his old country Italian tradition, mixed with some New York flare, to Middle Tennessee. By this time, he had Italian food and classic New York style pizza down to an art.     We love Etch. We have been regularly visiting Etch downtown Nashville for over 10 years. The food is always delicious and amazing. First time visiting Etch in Franklin. Everyone was wonderful. I would like to mention that my catfish needed salt. Otherwise, it was an awesome experience as usual.

    We had a wonderful experience. My wife had the filet and I had the bone-in chops, and probably the best I have ever had. Extremely moist and the Chardonnay Salt really elevated the taste. The noise level was very nice and the place was full. Andrew was our server and did an outstanding job. We will certainly return.

    Although a bit loud for a quiet, romantic dining experience, this restaurant is superb. The service was excellent, we felt appreciated being there for the first time (we even got a special treat). The menu had a decent number of plates and the portion size was good (not huge). The flavors we experienced were delightful, a very unique set of combinations. The Pork chops and the green salad, as well as the Kale Salad and Shrimp and Grits were delicious! The Cocktails we had were excellent Loving Cup and Midnight Sun were perfectly balanced with a good level of alcohol, no skimping on anything at Red Pony.

    This is a quality, fine dining experience that one might miss since hotel restaurants tend to be more casual. Once we arrived at the Curio Hilton property- we didn’t want to leave and knew the 1799 kitchen would be high quality. We were not disappointed.
