Eight years ago, Maximo Bistrot started as a restaurant for the thinking and execution of dishes from a wide range of techniques with the best of local ingredients; a warmful place that communicated our love for food. What an amazing experience - food was delicious, service on point, and everything about the place was fantastic! The only thing we did care for was the pulpo and potato warm salad - the octopus was slimy. We loved the fish a talla, tuna tostada, shrimp aguachille and fig tart.

Truly outstanding drinks with a terrific balance of flavors. Butter mushroom Old Fashioned for example had just a hint of maple syrup without being over sweet or cloying. Matcha martini had a hint of matcha that enhanced the base gin martini without overwhelming it. Bartenders were friendly, had a great sense of humor and engaging without being intrusive. Well worth the experience.
