Very fine steak, creative bibinap and a deconstructed Caesar salad were all top notch. The appetizer calamari perfectly light fry and delicious although not so healthy Brussels. Mud pie and toffee pudding a yummy sweet finale. We love the bar atmosphere and the attentive competent service. The friendly server named Jamoy took us through the menu with care, providing his recommendations. We started the evening with cocktails, well-balanced and refined. The biscuit was as hands down one of the best things I’ve ever tasted! The pimento cheese was savoury and delicious. The tuna tataki was fresh and delicate. And the wood grilled pork chop was nothing short of a piece de resistance! This menu was inventive beyond expectation. The melange of flavours put this place near the top of the heap in all of Colorado, in my humble opinion. I can’t wait to come back. It is a perfect balance of cold and warm and the progression is great. Yellowtail jalapeño Oysters Nobu salsa Cucumber Sunomono salad Miso soup Black cod lettuce cups Octopus, King Crab and Yellowtail nigiri sushi Grilled cauliflower with jalapeño Miyazaki Wagyu beef Tuesday we just walked in and sat at the bar. You need to start lining up if you walk in at 4:30 and you either get last minute cancelled tables, bar, or sushi bar. Otherwise you have to wait for the second turn. For reservations on Christmas we were thankfully in Paris so the timezone was manageable, because reservations open up at midnight of the timezone the restaurant is in. The burger and caesar salad with shrimp were both good. As was the French onion lasagne. Leave room for dessert. The lemon and fennel is my all time favorite dessert. Unbelievable flavors! We also had the sticky toffee pudding. Very good too. The service was top notch. Corinne was very pleasant and knowledgeable about the menu. She was excellent. Attentive and helpful.
