From the creators of Sweet Basil in Vail Colorado comes a fresh, innovative new restaurant opening December 2012. Aptly named Mountain Standard, this rustic and relaxed tavern aims to set a new standard in the Vail valley by using an ancient form of cooking. The majority of Mountain Standard’s menu will be prepared via the most primal cooking method: over an open and live wood fire. The only restaurant in the valley to devote themselves to this age-old way of cooking, the food at this exciting new restaurant will have rustic, bold and honest flavors, focusing on the purest ingredients in the Rocky Mountain region and beyond.Service, like the cuisine, will have that perfect balance of providing a first class dining experience with a more casual vibe. There is no smoke and mirrors here - no fuss - just simple, honest, from the heart service and cooking. The beauty of the creek side location is mirrored by the high energy vibe of this dynamic restaurant.

Volario’s serves bold, earthy fare inspired by the pasture-rich terrain and fragrant kitchens across the Italian Alps – right here in the Rocky Mountains. With a menu that changes with the harvest of the season and the catches from the streams, Volario’s surprises the palate with both local produce and faraway flair. As you savor the rustic and robust flavors from the mountainous regions of northern Italy, we invite you to sit back with a nice Chianti and reflect on your day in the majestic mountains here. Our dishes are hearty and adventurous, much like Volario himself. The legend in the Grand Valley is as old as the pines that shade the creek. Volario wasn’t from these parts. We had a diverse sampling of Tabernash Taverns menu and nothing disappointed. Very fine steak, creative bibinap and a deconstructed Caesar salad were all top notch. The appetizer calamari perfectly light fry and delicious although not so healthy Brussels. Mud pie and toffee pudding a yummy sweet finale. We love the bar atmosphere and the attentive competent service. Dined here 6 or more times in the past few years, always super satisfied!

We came away from a Christmas dinner here truly wowed. The friendly server named Jamoy took us through the menu with care, providing his recommendations. We started the evening with cocktails, well-balanced and refined. The biscuit was as hands down one of the best things I’ve ever tasted! The pimento cheese was savoury and delicious. The tuna tataki was fresh and delicate. And the wood grilled pork chop was nothing short of a piece de resistance! This menu was inventive beyond expectation. The melange of flavours put this place near the top of the heap in all of Colorado, in my humble opinion. I can’t wait to come back. Gratitude to the chef, servers, and other staff who made this such a delightful experience.

This is our favorite Japanese restaurant in the world. Highly recommend all of these items. It is a perfect balance of cold and warm and the progression is great. Yellowtail jalapeño Oysters Nobu salsa Cucumber Sunomono salad Miso soup Black cod lettuce cups Octopus, King Crab and Yellowtail nigiri sushi Grilled cauliflower with jalapeño Miyazaki Wagyu beef Tuesday we just walked in and sat at the bar. You need to start lining up if you walk in at 4:30 and you either get last minute cancelled tables, bar, or sushi bar. Otherwise you have to wait for the second turn. For reservations on Christmas we were thankfully in Paris so the timezone was manageable, because reservations open up at midnight of the timezone the restaurant is in. Likely to sell out quickly on the weekends or peak season. Hope this helps!

Great restaurant with a unique menu. A must appetizer is the whipped feta. Delicious and a nice presentation. The burger and caesar salad with shrimp were both good. As was the French onion lasagne. Leave room for dessert. The lemon and fennel is my all time favorite dessert. Unbelievable flavors! We also had the sticky toffee pudding. Very good too. The service was top notch. Corinne was very pleasant and knowledgeable about the menu. She was excellent. Attentive and helpful. We had an enjoyable dining experience.
