Talking up St. Louis' wide-ranging Italian eatery scene, which gets as specific as regional specialties, he says he's wanted to have a place like this since he was 18."We're going to start very simple and accessible," he says, "we'll play to the crowd and start a dialogue, then grow the menu with community input.""Simple," includes dishes like his tomato bisque, with which only has five ingredients. "It's all about the perfect balance. And that gets back to the essence of good Italian food: quality ingredients, very few, in perfect balance." Other examples include his St. Louis-style, thin-crust pizza, best compared to a flat-bread.

    This was a special dinner for my sister's birthday, a place we'd talked about going to for some time, and we were really looking forward to it! The wait staff were all very nice, informative, and attentive, but... We ordered an appetizer to share the Trumpet Mushrooms, and it was absolutely delicious, a departure from the "normal." We ordered our mains - my BIL ordered the scallops, my sister, the filet mignon, and I ordered the bison NY strip. We sat. And, sat. As others who'd come in after us had their dinners delivered... we still waited. Finally, the waiter said that the steaks had been overcooked and they were remaking them. My BIL's scallops came, and my sister and I still waited. Finally! Our steaks came... but there were 2 filets. I asked about my order of the bison and was told that they'd been out of it for a few day. Huh? Okay, I'll keep the filet. But, dang... a Dijon sauce??? Nope. I don't do anything with vinegar. So, I sent it back and opted for the trout, which was delicious. But, the mistakes and the time it took for our mains was really not good, especially for being first-timers. Will we be back. Yes, I do understand that things happen. But, as a higher end establishment, it should be addressed.

    From the moment we entered to the moment we left, it was excellent. Being used to the east coast restaurant scene, we are tough to please and haven't found a place in Colorado Springs that has wowed us. Cowboy Star did. Our server JOSH was top notch. His wine knowledge was superb. Although it's more of a steak forward menu, we had two different seafood options that were delicious. It's a bit pricey. But, we will visit again for sure. We found some WOW in Colorado Springs.

    Fantastic experience from start to finish. Our server was AWESOME. He caught some hilarious conversation snippets and rolled with it. The food was incredible, the wine pairings On Point. I definitely felt comfortable and taken care of for a gluten-free dinner along with my gluten-normal friends. Highly recommend and look forward to visiting again.
