Featuring Chef Nobu Matsuhisa’s signature new-style Japanese cuisine, Matsuhisa Vail is located in the Solaris Plaza in the heart of Vail Village. Our dining room is open from 5pm nightly. Takeout available nightly from 5-9 pm.

Chef Nobu Matsuhisa’s fusion cuisine draws influence from his classical training in Tokyo and his life abroad in Peru, Argentina, and around the world, showcasing signature dishes such as Yellowtail Sashimi with Jalapeño, Black Cod Miso and White fish Tiradito.

This may have been one of the best meals my wife and I have ever had. Exceptional service, food, and atmosphere. Katerina helped select dishes based on our palate, all of which was phenomenal. We cant wait to return for the yellowtail with jalapeno, tuna with fried rice, and sashimi. 12/10!

Seated promptly. My friend spilled her drink, they replaced it free of charge. Food is always outstanding. Matsuhisa continues to be a favorite of mine!

For a birthday celebration, I couldn't have asked for anything better. All those that served us were very nice but professional. And the food was delicious.

We had a beautiful birthday celebration. Our table was in a semi private alcove with view of the main dining room, with an open fire pit nearby for warmth on this chilly night. We had an excellent meal delivered with attentive and comfortable service. It was an exquisite birthday celebration , one that our family will always remember!

Everything was outstanding! Katarina, our server was excellent! The Tempura Shrimp was the best we ever had. The sushimi was incredible and the rolls were excellent! I highly recommend this place For anyone that loves Japanese cuisine and a great atmosphere!!
