    A cargo del chef Luis Pabón y la sommelier Gabriela Moreno, la experiencia gastronómica —que hace eco de la rúbrica de hospitalidad contemplativa deL Hotel Casa TO—, se inspira en un cuidadoso diálogo entre las preparaciones y sus maridajes, donde los fogones y la cava son los medios por los cuales sus anfitriones consienten a los comensales.
    Para la cena se han concebido dos menús: uno a la carta y otro para degustar en siete tiempos, maridado con vinos y mezcal.
    Las recetas creadas por Pabón rinden un homenaje a la cocina de temporada, brindando protagonismo a la frescura de los productos y sus distintos matices: dulces, ácidos y picantes, enfatizados por el dominio de distintas técnicas de preparación.
    Moreno, a su vez, apareja el menú con una selección de vinos Pét Nats, orgánicos, blancos ligeros, naranjas y tintos suaves con bajo contenido de alcohol, también conocidos como vinos glou glou –frescos, jóvenes y divertidos.

    The one place our friends that live in Oaxaca said was a must, and they were right! Delicious food, friendly service and nice location. We came in for lunch after a hot day in the botanical garden and the courtyard at Origen was perfect with its airy atmosphere. With a refreshing beer in hand, we started with three appetizers and were blown away. The Fish Ceviche, Duck Enchiladas and Beef Tartare were amazing… so much so that we had another Ceviche as our entree. Our kids shared the Res-Tirada Rib-Eye and loved it! Great service and atmosphere, with authentic cuisine. Our favorite in Oaxaca so far! A+!

    What a wonderful experience! Everything we ate, from the divine corn and squash blossom soup, to the miniature braised short rib tacos, to the incredible elote tamale, was exquisite. They offered us a scrumptious complimentary amuse bouche of chicken mole on chicharrones, a basket of incredible little cheese breads, and the most gracious, warm service. We want to go back and try everything, as the party of six next to us was doing, with very evident delight. One of the best dining experiences ever.
