In its bright and colorful restaurant, Alcalde serves modern Mexican cuisine with upscale flair in its friendly, Guadalajara-area eatery. The tostada de atún tuna piled on a crisp tostada with guacamole and radish and the tartar of smoked tomato juice, scalded egg yolk and pickled vegetables make unique and tasty starters. Some of Alcalde's specialty entries include the smoked octopus with vegetable risotto, the duck in adobo sauce with shrimp, chilies and eucalyptus and the juicy steak in pan jus.

Alcalde's coconut parfait with raspberry ice cream, elderberry juice and cilantro makes a perfect end to a delectable meal.

When the very nice waitress told me chicerron is like pork belly I knew I was in the wrong place. A big green presentation good only for Instagram easily mistaken for salad but only 2 nasturcium flowers were edible made me think if I can't eat it get this f'ing thing off my table. The venison tartar, a speciality of Toledo, Spain was pretty good. Veal shredded and turned into fried schnitzel was weird. You don't do this to veal. Chardonnay was middle of the road. A hip type, colorful atmosphere . The waitress cleaned our table with a wet cloth then I needed to dry it with a napkin when she walked off. Came with anticipation, left not returning.

Alcalde es realmente el mejor restaurant de Guadalajara; sin duda. Y desde luego uno de los mejores de Mexico. Compartimos, entre tres, dos entradas y tres fuertes; cinco gemas; originales y excelentes. Buenas presentaciones sin llegar a preciocismos y cantidades razonables, no minimalismos. Precios algo elevados pero justificados por la calidad y la originalidad de la comida. El lugar es bonito y no muy grande con una barra con 5 lugares ideales si vas solo. El servicio excelente también. Un lugar que nadie se debe perder si aprecia la cocina a la altura de lo mejor. Imagina: cecina, flautas, ternera, chicharrón y pulpo. Pero en preparaciones totalmente diferentes. Tenemos que regresar……y pronto.

La comida fue deliciosa, de extraordinaria calidad pero con una peculiaridad que me hizo valorarla : el menú incorpora platillos típicos mexicanos -taco, mole blanco, pipián, por ejemplo- e ingredientes nacionales -miel melipona- con mucha fluidez y autenticidad. No es un menú que tenga imposturas extranjeras sino que desde México ofrece platillos sofisticados y deliciosos al nivel de los más altos estándares internacionales. La fórmula del nuevo significado de restaurante de lujo es, en mi opinión: autenticidad más alta calidad. Y Alcalde lo logra como pocos. El servicio fue estupendo; los meseros estuvieron atentos a nuestras necesidades, respetando nuestra privacidad. Me gustó que los cubiertos fueran de Laguiole: de la mejor calidad sin ser pretenciosos, muy en sintonía con el resto de la estética y del ethos del lugar. ¡Gracias por tan buena experiencia!

Do not miss Alcalde. One of the best restaurants in the world for a reason. Highly recommend doing the tasting menu, at the chef’s counter if you. Every course was beautiful flavor and presentation.
