There are ninety-nine different ways to write “sushi” in the Japanese script of kanji. Each with its own unique interpretation and meaning. It was with great deliberation that our founder, Billy, chose 寿司 to best represent his personal interpretation of the word - Celebration of Fish!

That’s exactly how Billy feels about the art of making sushi and the atmosphere that surrounds it - it should be a celebration! Which is why Billy Sushi is more than just a restaurant, it is an experience for anyone who allows themselves to take part.

A three-ring performance of sorts - sushi bar, sake bar and dining room - brought to life by the performances of sushi chefs, bartenders and servers. And the Ring Master and your host, Billy.

Chef and owner Enkhbileg “Billy” Tserenbat has been cooking in the Twin Cities for more than 20 years and often checks in on tables himself, so don't feel shy asking him for menu recs. Settle into one of several sleek tables, choose a drink from the extensive sake and whisky selection, and be prepared to have one of the best nights out.

    If you’re looking for good quality sushi this is the place to go. Yes it’s higher price but truly the statement “you get what you pay for” applies. We got to sit at the sushi bar and chat with the executive chef which was so helpful when deciding what we should try plus just made the entire experience a little more personable. Got some saki and wow was that amazing! Our server was the perfect blend of attentive but not over bearing, also very helpful as it was our first time going to Billy’s so they helped guide our palettes! This will not be the last time we go.

    Our server Sarah was delightful! The food was absolutely amazing as always. Whenever we stay in Minneapolis we have to make a stop into Billy Sushi!

    Great atmosphere and amazing sushi! Tuna poke appetizer was delicious and we loved the NOLO YOLO Big Blue wave and Fast and Furious rolls. Always a hit!

    Food is very good, but very overpriced. Server was doing his best, but the kitchen was very slow and messed up our order. We also had to wait 20 minutes for our table, despite a reservation. Not the experience I expect for the prices they charge. Very poor value.
