We are the protest against exclusion at a formal table. Dining Fine is our prayer within bistronomy: eating and drinking deliciously with a messy heart and a stained tablecloth, yes, with market ingredients, from sustainable agriculture, by colleagues who aim to nourish with impeccable products: ranches, farmers, fishermen, pure harvest and heartfelt supplies. We transform the product through techniques from different world cuisines to find explosive flavors, subtle flavors, flavors that make the palates fill with groove.

Charco was amazing. Went with friends and sat at the bar, watching all the action happening. We literally ordered the whole menu, and one dish was better than the other. My personal favorites were the sando tartar de res, the cebollitas témpura, the kampachi, the pan de masa madre and the Ny steak. I paired my delicious meal with my menu favorites: the char and timber and the Tokyo cobbler—both divine! And for the best closing, the tarta de chocolate was TO DIE FOR. 100 out of 10!!! The views are unbeatable, and the ambiance is fantastic; new favorite restaurant in Mexico!

Quite Outstanding. WOW. Order a tratar sandwich just for yourself. You will not regret it. Everything else is amazing.

Charco es uno de los nuevos rincones más fascinantes de la Ciudad de México. Desde su terraza, elevada sobre las cúpulas de la Catedral Metropolitana, el Zócalo se extiende como un escenario monumental; anoche, una luna llena lo acompañaba con una luz casi teatral. El espacio entero destila la energía audaz y creativa del chef Ricardo Verdejo: la curaduría musical, la iluminación tenue y la disposición del mobiliario están pensadas para que cada detalle sume a la experiencia sensorial mientras que te sientes como en tu casa; Apenas cruzas la puerta, su calidez te arropa. La propuesta culinaria es un desfile de matices umami que viaja del ahumado al ácido con una ligereza juguetona. Aquí comerás las mejores cebollas chambray que hayas probado en tu vida! Destaca, además, su compromiso con la inclusión y la diversidad, todavía poco común en la escena gastronómica capitalina. Charco no solo invita a comer; invita a quedarse. No te lo pierdas!!

Increíble para disfrutar el atardecer con una comida deliciosa con una carta de vino bien hecha. Recomiendo mucho lo que probé: los cebollín, el tartar, las brochetas y la pesca del día.
