COLLETTE is a name that I love. It has been in my family for generations. It means "Victory of the People". The perfect embodiment of my intentions to collaborate with local farmers to do food well for the community that I am thrilled to be a part of.

The owner, chef and location remain the same with a reimagined notion of fine dining:

    Great restaurant for a casual upscale dinner. It has a new chef and I am hopeful it does well. It uses farm to table concept and this time of year there isn’t much farming in the area. That concept will function better in the spring and summer, IMHO.

    Really wanted to like this place. The service was extremely slow. The food was decent at best. I would come back in hopes of better service. I may try some other choices on the menu.

    The food choices were excellent and both myself and my wife enjoyed the salmon and Brazilian beef, respectfully. Your chef is EXCELLENT, but I think she needs some help to get food out a bit sooner. we will come back and look forward to other "farm to table" offerings. Just a thought. And would like to see a bit more mid-range priced red wines. Joseph Phelps Insignia is delicious, but I'm not spending $422 a bottle.

    Menu online is really confusing. Great service and ambiance. Good food but needs a little more flavor/spices. Pricy.

    After reading several reviews I was very excited to try this restaurant, but it didn’t seem to match what I expected. The restaurant had a an older/antique vibe with elevator music and the experience was longer/more of a tasting menu style. A more clear traditional menu or a tasting menu would have let me know what to expect.

    The food was amazing. my experience was a new one and such a great one. The staff, especially Kasey, was professional, friendly, and fun to be around. Definitely going again.

    This weekend, we visited Collette's for the first time. We opted for a tasting menu, as we heard that was their focus for their opening week. Honestly speaking, we were more than impressed. We were blown away. Let me try to give a few details. After ordering our drinks (try the High on the Hog!), we were brought a little starter that had something called dragon thumb beans in a spicy tomato jam. This was served with a house made hummus. This dish was very different but fantastic. We then were served the crab toast that was small and delicate and wonderful. You could taste every ingredient. It was served with little poached crab and a meringue egg. This dish was my wife's favorite. Next, we had the slow roasted carrots. This dish was so complex that I haven't figured out exactly what was it in besides pomegranate seeds, some eatable flowers and a cream sauce under the very sweet carrots that had some sort of mild Indian spice. I could have eaten this as an entree. We then were served the aged New york steak and the Asian inspired chicken. Both were great and filling.  For desert, we were served a pomegranate sorbet,  a bit-sized tres leches cheese cake, and a small piece of the basil / lime curd cake. Each of these was so different and fantastic that it was hard to pick a favorite. As you can tell,  we had a great evening.  We were not rushed, which let us really enjoy such a special meal. We truly appreciate the farm to table approach and Chef Hunsakers amazing talent. We will certainly be back.

    Loved coming in and seeing all the new changes! Hunsakers was great, but Collette’s takes it to the next level. The updated décor is warm and inviting, creating a cozy atmosphere that's perfect for a night out. The menu has some familiar favorites with fresh twists, and every dish we tried was full of flavor. The service was attentive and friendly, making the whole dining experience even better. Highly recommend Collette’s if you're looking for a wonderful meal with a touch of elegance!
