Glass Brasserie is an eloquent, lofty restaurant and wine bar with panoramic views overlooking Sydney's historic Queen Victoria Building. Under the culinary guidance of head chef Natalie Murphy, the Glass team dreams up honest, simple culinary experiences that celebrate the finest seasonal produce in imbued flavour.

The brasserie-style menu is designed to take guests on a journey, losing themselves in the enclaves of the restaurant's ambiance, flavours and character. Glass boasts one of Sydney's most comprehensive wine lists, curated by Head Sommelier, Mauro Bortolato for almost two decades. The 3,500 strong collection is encased in a striking wine wall that spans floor to ceiling through the space. Designed by renowned interior designer, Tony Chi, the restaurant's interior exudes equal party's intimacy and grandeur with it's ambient open-plan kitchen and expansive day-to-night dining experiences.

    The prawn entre was good, the sashimi entre was a bit tough, the main steak was a bit tough, the camembert was pretty ordinary. The wine (a pinot) was terrific but very pricey. We had been to the Glass Brasserie a couple of years ago and it was excellent. It certainly wasn't that same standard last night.

    Loved everything from start to finish. Banquet menu was amazing value - well presented and yummy. Wine list offers different options and we enjoyed a couple of Australian whites at modest prices. Staff were professional and casually attentive. Atmosphere lively and vibrant. Sydney has many good restaurants but Glass brasserie is one you can’t miss.

    High level of service and skilled execution as would be expected from Hilton. Ambience was great with some fab modern jazz sounds not too loud. Food was delicious and skilled sommelier supported selection of perfect beverage. Attentive service without being overbearing. perfectly timed to meet our need to get to a show, without feeling rushed. We’re planning to head back for the banquet in future
