J Carver's Oyster Bar & Chophouse features market fresh oysters & premium wood grilled steaks. Nestled in West 6th District of Downtown Austin, John Carver, Owner and Chef delivers an elevated classic fine dining experience featuring a gorgeous raw & oyster bar and intimate dining experience.

In order to honor all reservations booked, we ask that all bookings adhere to our suggested dining time frame. Please contact our reservationist if you have additional questions. Our time frames are as follows
2 people - 2 hours
3 people - 2 hr 15 minutes
4-5 people - 2 hr 30 minutes
6-7 people - 2hr 45 minutes
8+ people - 3 hours

    Wow, wow, wow! My fiance and I both agreed this is the best restaurant we’ve ever eaten at! We really enjoyed sitting at the bar - we got to see all the liveliness of the restaurant and enthusiasm of the bartenders but still received 11/10 service. The food was melt in your mouth, no taste note missed, incredibly delicious! We will definitely be frequenters of J. Carver. It simply doesn’t get any better.

    Our waiter was Brendon, he was one of the best we’ve ever experienced. He had great recommendations & was always attentive. Make sure you request him when making reservations. We tried so much but our faves were the bone marrow, jasmine crab fried rice, caviar service & the A5 Wagyu. We will definitely be back!

    We recently dined at J Carver in Austin with our two children and were impressed by how accommodating and welcoming the staff were. From start to finish, the service was impeccable, setting the tone for an unforgettable meal. The drinks were phenomenal—we ordered the French 75 and the Old Fashioned made with Hibiki, and both were expertly crafted. For appetizers, we tried the caviar and crab cakes. The caviar was exquisite, and the crab cakes were hands-down the best we’ve ever had! For our main course, we shared the 60 oz tomahawk steak, accompanied by potato gnocchi and spinach. Every bite was incredible—perfectly cooked and bursting with flavor. We ended the meal with their chocolate cake, which was rich, decadent, and the perfect sweet finish to an amazing evening. J Carver exceeded our expectations in every way. Highly recommend for an elevated dining experience in Austin!

    Took our daughters to celebrate our 39th anniversary. From the moment we entered, we were taken care of like VIP! Gini took care of our table. She is brilliant At all things from drinks to ingredients in food. She could read the table like an open book. Thank you Gini!!!

    Our server, Chris was perfect, very charismatic, knowledgeable patient and courteous. J. Carver has never let me down. Looking forward to dining there again real soon.
