We look for a selection of grapes that will allow us to obtain a more aromatic and fresh wine, medium weight, gourmet character and representing the terroir of the Douro Superior, with its very elegant notes of rock rose and black fruit and spices. The grapes that created this wine fermented together. My goal was to harvest the various grape varieties from different vineyards when I believed the timing was right to produce a wine for ageing. Great concentration and very fresh, the blend produced a remarkable complex aroma where the notes of oak mingle harmoniously and add complexity to the spices, blackberry, liquorice and violets, in a blend that promises to get better in the bottle year after year. Grapes: Códega do Larinho (60%), Rabigato (20%), Viosinho (20%). Origin: In this wine we look for the aromatic concentration and high acidity of the grapes Códega do Larinho from very old and traditional vineyards of the Douro Superior, of high altitude around 500 meters. With this wine we seek to recover this native Douro grape that we almost only can find it in the old vineyards, and thus show his character very mineral and creamy. Vinification: Hand-picked grapes to small boxes of 15 Kg, cold fermentation technology on reductive environment, with controlled temperature at about 16 ºC, very gentle crushing and pressing in an inert atmosphere to preserve all the aromatic potential of grapes. We made a great effort that all the pre-fermentation operations were carried out with the great accuracy to preserve the intrinsic quality of the wine. The grapes are pressed without crushing and without destemming under an inert atmosphere in order to preserve all the aromatic potential of the grapes. A great effort is made to ensure that all prefermentation operations are carried out to the strictest possible extent and are therefore responsible for the intrinsic quality of the future wine preserving its primary aromas. Excellent service from the very beginning. We had booked a table, but when we arrived, we were given the choice to sit further into the restaurant away from the door. Pedro was very helpful with choosing wines, providing an at table tasting service. The food was all delicious, as were the drinks. All of the waiting staff were very attentive and helpful. There was a good, lively atmosphere without being too noisy, and our table were all able to easily converse with one another. A really wonderful afternoon!Is this helpful?
