    Another fabulous evening at The Seeker! There was six of us, my adult daughter's birthday. All of us loved our meal and one again, Waverly was our wonderful server. Chef Pyles greeted us at the door and stopped by our table. We found out later that a tornado was in the area but we didn't notice because of the fun we were having! Thanks again!

    Absolutlely Wonderful expierence. Food was superb, atmosphere fantastic. Wonderful for a special ocassion. We were celebrating our 20th wedding aniversary and the staff made our evening special. Niycole, our waitress, was very attentive to us and very helpful with her recomendations. You won't go wrong having supper at The Seeker.

    I love this restaurant! It is decorated so lovely, the presentation and taste of the food is wonderful. Waverly has been our server twice and does such a good job!

    Some dishes were great, but I can tell there is a lot of experimentation still happening. The lobster custard was pretentious and unpalatable. And cilantro had no business being on my salmon. The texture of the grits was off. I did love the deviled eggs. As for ambiance? It was akin to being in a denny’s, and this juxtaposition does not align well with the menu or my expectations. the wobbly table did not help. More booths would create a more intimate experience and eliminate the possibility of the family next to us eaves dropping on a conversation that is non of their business. The wait staff was lovely and though still in training, I could tell she was trying and learning. The whole experience was trying and learning. If the chef is having the menu taste tested, he may need a second opinion.

    We drove from FTW to stay overnight at the new Interstate Inn and dine here at Chef Pyle’s new restaurant. Lovely contemporary restaurant design. Upscale and classy. We were seated at one the booths for two along the wall overlooking the open kitchen. I intended to order a Manhattan but upon discovering they're pouring Gallo vermouth decided on a Maker's Old Fashioned which was nicely done. Anne went with a glass of an Italian Pinot Grigio. I ordered that as well with my entree. We started with the shrimp ceviche. This is a unique rendering of the dish and quite enjoyable. The portion, however, was surprisingly and remarkably small for $17 even by upscale FTW/Dallas restaurant comparisons. The Caesar salad presentation here is so creative. See my pic. The dressed whole Romaine leaves are arranged in a toasted Parmesan cylinder which you crush up, slicing the leaves yourself to mix. The dressing is excellent. Again the portion is small, especially to share. But the price point is reasonable at just $10. We both opted for the grilled quail. This was the star of the show. The quail were nicely seasoned and perfectly grilled. The mound of crisp, fresh Arugula sang with the most perfect Arugula enhancing vinaigrette we have ever tasted. The poached pear, compressed beets, and seasoned walnuts all complimented so perfectly these grilled birds. So good. Were we locals this would most definitely become a regular restaurant for us.

    This is one of the newest restaurants in Stephenville. It opened under the Stephan Pyle banner, earning write-ups for the restaurant anf motel in Texas Highways and other outlets. I knew it would be expensive, but being an SP restaurant I had high hopes. Our server was wonderful and helpful. When they learned it was my wife's birthday, they printed a personalized menu for her. She was delighted. She had the sea bass and I had the southern fried chicken. Her sea nass was excellent. The chicken, not so much. The leg was okay. The breast was dry and tough. The mashed potato tots were bland, and the accompanying honey-based sauce(?) was, I'm not sure what to say. Slightly sweet with savory tones. We needed to order a side to get a full meal. The cocktails were wonderful, and pricey. The blackberry cobbler was good, except for the rock hard biscuit, which made it difficult to eat. I'm glad we went, and glad my wife enjoyed her meal.
