Veritas is a 20-year-old West County restaurant offering our community a relaxed, yet sophisticated place to enjoy innovative food and drink.
Chef / Owner Mathis Stitt’s open kitchen allows everyone to see exactly how he turns fresh, locally sourced provisions into enticing and delicious offerings. While these beautiful compositions are clearly the stars, our entire team takes pride in the relationships developed and nurtured around a Veritas table.
For 8 years, Ian Froebe of the Post Dispatch has published a list of the Top 100 Restaurants in St. Louis - Chef Mathis’ Veritas has been on all of them.

    1840: the history of Dourthe begins... Pierre Dourthe, a hottelier in the Southwest of France, launches a Bordeaux wine business. Never would he have imagined that his direct descendants would go on to associate the name Dourthe with the grands vin of Bordeaux. Join us on Thursday March 6 at 6pm as we welcome Frederic Bonnaffous, Head Winemaker and Estates Director of Dourthe Family Wines. With several years’ experience working at various Bordeaux estates, in 2002 Frédéric was appointed Director of Dourthe’s Chateau Belgrave (Grand Cru Classé Haut Medoc), and subsequently given the additional responsibility of Chateau Le Boscq (Cru Bourgeois Saint Estèphe), and Chateau Grand Barrail Lamarzelle Figeac (Saint-Emilion Grand Cru). Continuing to develop Dourthe in its capacity as a Bordeaux producer, the magnificent renovations at Dourthe’s Chateau La Garde and the acquisition of new estates, led naturally in 2011 to his promotion as Director of the entire Dourthe portfolio of estates. We will pair all five of the listed Bordeaux properties' wines with five of Chef Mathis' fantastic compositions. $175 per person exclusive of tax and gratuity, $160 VIN and Grape members.

    We had a table of 10 for dinner. Food and service were phenomenal. Highly recommend for anyone looking for a great dinner with seasonal ingredients. We had 2 people that were gluten free and they were very accommodating.

    Veritas was outstanding in every way! Food was AMAZING, service was great, atmosphere was so nice , menu is ever changing with new and delicious choices, but the main staples are always there too. Everyone in our group thoroughly enjoyed their dinner. Can’t wait to go back!

    Very creative appetizers and entrees by Chef Stitt! Amazing Mahi Mahi dish tonight! Never tasted the combination of orange with tomato with black olive in a lightly salted peppery sauce to die for. Wonderful compliment to the tender fish. Also the “Devils on Horseback” bacon wrapped prunes are crazy delish. The staff is also super cool and genuinely interested in how their diners enjoy their meals. Nice work! Can’t wait to return to try more items.

    The food was way too expensive for what it was. Also nobody helped with wine pairings, our waitress seemed unhappy to be working, drinks took way too long and food came out when we weren't even done with our appetizers. The cost was like Capital Grille with Outback food. The decor is very outdated. Will never return.

She apologizes, by the way, for not being more specific with her red wine recommendations. We will address your legitimate concerns regarding timing - you shouldn't have to wait too long for drinks, and should have plenty of time to enjoy your appetizers before entrees come.     Creative, inventive cuisine in a cool, inviting setting. Intimate and friendly spot with a great wine selection. Executive Chef Mathis changes his menu weekly while his Mom and Dad run the back of the house and manage the wine list with experienced wine veteran Chris Hoskins. The drive to Chesterfield is worth it.

    Always great menu choices! Tried new pot pie and husband had trout. Delicious! Cocktails were excellent and got some eggnog for the holidays Enjoy!
