As a native of Maryland's Eastern Shore, Anthony brings an innate sense of place to each plate with an intractable reverence for local ingredients, and an aesthetic that allows these ingredients to shine.

The thoughtfully curated beverage program at Vermilion echoes this philosophy with an expansive offering of terroir-driven wines and a cocktail menu committed to seasonally-sourced ingredients. A sensational collection of over 150 fine whiskies, ryes and bourbons rounds out the experience and for many serves as reason enough to visit time and again.

    Vermilion’s Dining Room offers a seasonally-driven celebration of our Mid-Atlantic region and the myriad purveyors who call it home. Chef Anthony Chittum’s continuously evolving menus reflect the day-to-day seasonality of their work and serve as a love letter to the rich bounty this region provides. In addition to the a la carte menu, we're proud to offer the Farm Table tasting menu experience, a family-style three course option designed to showcase our menu in its entirety. For guests unable to access the upstairs dining room, we will happily offer this in the downstairs tavern and bar.

This experience is available to all guests dining in the downstairs dining room and at the bar. While reservations are encouraged for seating in the Tavern, our spacious bar is perfect for last minute get-togethers, happy hour revelry or a simple snack at any hour. Seating in the bar is available first come.

    Excellent food, but loud background music. We requested sparkling water, whcih was pour into our wter glasses, but varous servers kept refilling the glass with plain water without asking. Irritating. We had difficulty understanding the descriptions of each dish as it was brought to the table.

    A lovely Valentine's evening experience. A great mix of tastings and shared entree. The wine pairings worked beautifully and Sam the sommelier gave a lecture on the local Terroir. Justin provided great service. We will be returning for their regular menu soon.

    We dined here for Restaurant Week, and it was 10/10. I had the best catfish of my LIFE, but every single thing we ordered was superb. My favorite restaurant in town. Go! You will not be disappointed.

    My dish was not quite hot but to reheat would have cooked the eggs. Otherwise all good. Service was great. There during restaurant week

    Went to celebrate our anniversary and we were put right by the front door. Decided on the tasting menu, but the first two courses were underwhelming. The desserts were great. So we left on a good note. I have been before with a larger group and did the tasting menu and the food was much better. So not the most consistent. The location is great and it was a lovely night but I think they need to taste their dishes. Beet salad was bland, and the flank steak tough. Our server was great. He kept the perfect pace.

    The beet and citrus salad and bison flank steak entree, topped off by Bettie's buns and warm apple cider cake, from the Restaurant Week menu, provided one of the most delicious meals I've enjoyed in years of wonderful Vermilion dinners.

    Excellent menu choices especially for Restaurant Week; however, they were out of one of four entrees by 7:30. Food quality and presentation has improved significantly since last visit. We appreciated the farm to table emphasis and freshness with most emphasis on Va, although I doubt Bison came from VA

    Janie, our bison is sourced directly from New Frontier farms, in Madison, VA! Chef Tony has been ordering from them for 20 years. It's local, we promise!
